We are looking for an exceptional Head Chef to lead the team of 20 in this busy 150 cover casual fine dining restaurant in Marylebone

The menu is shaped by the seasons and showcases open fire cooking, in-house butchery, dry aged meats, house pickles and ferments. There is an open theatre kitchen & Grill, separate prep kitchen, counter dining and a cocktail bar. The Executive Chef/owner has a very craft-led approach to food. Everything is prepared in-house from scratch with excellent attention to detail. The team is young, focused and work hard. This kitchen is always busy.

As Head Chef you will be responsible for all aspects of the day-to-day running of your kitchen including:

• All food preparation, cooking and service
• Managing and training the team of chefs
• Quality assurance
• Stock management, GP and wastage
• Health, safety & hygiene
• Compliance with statutory regulations and legislation
• Promoting the goals of the organisation on a daily basis with every employee

Our ideal candidate will be a customer-focused chef with a rigorous approach to kitchen management, a positive attitude and a hands-on approach. You will have at least 3 years’ experience as Head Chef in a similar busy fresh food restaurant cooking to 2AA Rosette level minimum.

• Starting salary of up to 70k per annum, including discretionary service charge and a further discretionary excess tronc estimated at about £3-5k per annum.
